1¼ cups lukewarm water - (plus extra if required)
1 sachet active dry yeast
1 teaspoon caster sugar
2½ cups all-purpose flour - plus extra
1 teaspoon baking powder
1 teaspoon bicarbonate soda
¼ teaspoon salt
2 tablespoons olive oil - plus extra
6-8 large chicken thigh fillets - diced
2 tablespoons grape seed oil
Sea salt and black cracked pepper to season
¼ cup BBQ sauce - plus extra if desired
8-12 tablespoons pizza tomato paste
2-4 tablespoons smoked BBQ sauce
1 red onion - finely diced
1 green capsicum - finely diced
1½ cups bacon - shredded
1½ cup ham - shredded
1 packet pizza cheese - shredded
In a small bowl, stir the sugar, yeast and warm water together.
Cover and set aside for 5-10 minutes, or until foamy.
Sift the flour, baking-powder, bicarbonate soda and salt together.
Make a well in the middle of the flour.
Add the olive oil and yeast mixture to the well.
Stir through until just combined.
Lightly flour a clean flat surface.
Knead the ingredients together until a soft smooth dough comes together.
Lightly coat a medium sized bowl with oil.
Place the dough-ball into the bowl and cover with cling wrap.
Set aside for 1½ hours, or until double in size.
Knock back the air from the dough and divide into four evenly sized balls.
Place each ball on a lined baking tray.
Dust in flour and cover with cling wrap and a tea towel.
Set aside for a further 25-30 minutes.
Preheat the grape-seed oil in a large, non-stick, frying-pan or wok to high heat.
Lightly season the diced chicken with salt and pepper.
Stir-fry the chicken pieces for 2-3 minutes, or until lightly golden brown around the edges.
Reduce the heat to medium.
Fold the BBQ sauce through and chicken.
Stir-fry for a further 3-5 minutes, or until the sauce reduces slightly.
Remove from the heat and allow the chicken to cool completely.
Preheat the oven to 160 °C (320° F).
Line 4 baking trays with baking paper.
Roll out each dough ball to create a thin base.
Transfer the dough to the prepared trays.
Using the back of a spoon, evenly spread the tomato paste out over the four pizza bases.
Evenly distribute the red onion, green capsicum, chicken pieces, shredded bacon and ham over each pizza bases.
Dollop BBQ sauce over the top of each pizza.
Top with cheese.
Bake in the oven for 10-15 minutes, or until the cheese melts and turns golden brown, and the base is cooked through.
