Fruity Spiced Hot-Cross Buns


Ingredients:  (Serves 4)

Buns:
2x 7g (2x ¼oz.) sachets active dry yeast
2 tablespoons compact light brown sugar
1¼ cups full cream milk
55g (1.94oz) unsalted butter - room temperature
4 cups plain flour (plus extra if required)
½ teaspoon ground cardamom
1 teaspoon garam masala spice blend
½ teaspoon ground cinnamon
1 cup raisins
Zest from 1 medium orange
1 teaspoon vanilla bean paste
2 large eggs - lightly beaten
½ teaspoon sea salt

Batter for the Cross:
½ cup plain flour
¼ cup water (plus extra if required)
1 teaspoon vanilla bean paste

Glaze:
¼ cup water
1½ tablespoons caster sugar
Unsalted butter - to serve


Method:
In a small saucepan, stir the brown sugar, milk and butter over a medium/low heat until the sugar has dissolved.
Remove from the heat and set aside for 10 minutes.

Stir in the dry yeast and set aside for a further 8 minutes, or until frothy.

In a large bowl combine the flour, ground spices and salt together.
Set aside.
Lightly beat the eggs and vanilla paste together.
Add the egg mixture, along with the foamy milk mixture, to the flour.

Using clean hands, knead the flour mixture together until a rough dough forms.
Transfer the dough to a lightly floured work surface.
Continue kneading for a further 10-15 minutes until a soft smooth dough forms.

Place the dough ball into a large, lightly oiled, bowl.
Cover with cling wrap and set aside in a warm spot for 2 hours, or until the dough has doubled in size.

Line two baking trays with baking paper and set aside.
Knock back the air from the dough and then knead in the orange zest and raisins.
Knead for a further 8-10 minutes until soft and smooth.
Evenly divide the dough into 10-12 buns.
Place the buns onto the lined trays, leaving a 2.5cm (1in.) space between each bun.
Cover with cling wrap and set aside for a further 30-45 minutes, or until the buns doubles in size.

Preheat the oven to 160°C – 180°C (320°F - 356°F)

Batter for the Cross:
In a small bowl, stir the flour ingredients together until a smooth thick runny batter forms.
Add extra flour or water if required.
Place the batter into a piping bag.
Pipe the cross patterns onto each bun.

Bake for 18-25 minutes, or until the buns are a light golden brown, fluffy and cooked through.
Set aside.

Glaze:
In a small saucepan, over medium heat, whisk all the glaze ingredients together.
Continue stirring until all of the sugar has dissolved.
Bring to a medium simmer, and then allow to simmer for 3-4 minutes.
Remove from the heat.
Brush the hot glaze over the hot-cross buns.

Serve freshly baked hot-cross buns with butter on Easter morning. Yum!
