Quick Christmas Cake


Ingredients: (Serves 4-6)

1kg (2.2lb) mixed fruit
600ml (1.3pt.) (20.3fl. oz.) chocolate or (Vegan alternative) almond milk
2 cups self-raising flour


Method:

Add the fruit to a large mixing bowl.
Add the milk.
Stir through.
Cover the mixture with cling-wrap and place in the refrigerator over-night.

Pre-heat the oven to 160°C (320°F).
Sift the flour through the mixture.
Fold through to combine.
Bake for 1 - 1½ hours.
Test by using a test pin after 1 hour.
Remove from the oven.

Place a damp tea-towel over the cake whilst cooling.
Cut and enjoy this delicious cake.

Note: Due to the milk component, refrigerate after the cake has cooled.

Pimp your cake:
If you like, you can replace 100ml (0.2pt.) (3.4fl. oz.) chocolate milk with fresh thick cream.
You can also add a cup of crushed, and roasted, macadamia nuts if you so desire.
